Abstract

Vegetable oils produced in Azerbaijan are quite rich in both quality and variety and play an important role in the domestic market. These oils possess diverse technological and nutritional properties, which allows them to be widely used in everyday culinary applications as well as in the field of healthy nutrition. Sunflower and corn oils, with their high omega-6 content, are beneficial for cardiovascular health, while cottonseed oil, due to its high heat resistance, is particularly preferred for frying and cooking processes. Olive oil and grape seed oil are rich in antioxidants, vitamins, and oleic acid and are used for both food and cosmetic purposes. Flaxseed oil, rich in omega-3 fatty acids, is especially important in dietary and healthy nutrition.

Refined oils allow for longer shelf life and provide a neutral taste, whereas unrefined oils preserve their natural flavor and aroma. In general, the suitability of vegetable oils produced in Azerbaijan for consumers, their health benefits, and their culinary applications are the main criteria, while local production not only supplies the domestic market but also has export potential.
